Ingredients
- 1 bunch - lacinato kale
- ½ heads - radicchio
- 6 ounces - broccoli slaw
- 1 - apple
- 1 - green onion
- ⅓ cup - dried cherries
- ½ cup - sliced almonds
- ½ cup - extra virgin olive oil
- ¼ cup - fresh lime juice
- 1 ½ tablespoons - honey
- 1 ½ teaspoons - dijon mustard
- ¼ tsp - salt
- ⅛ tsp - black pepper
Instructions
- Preheat the oven to 350 degrees F. Place the almonds on a rimmed baking sheet and toast for 5-10 minutes until golden brown and fragrant.
- Place the kale, radicchio, broccoli slaw, apple, green onion, and dried cherries in a large bowl and set aside.
- Place all dressing ingredients in a mason jar and secure the lid. Shake vigorously until emulsified and adjust the seasoning as needed.
- Toss the salad with enough dressing to coat (you won't need it all), and top with the toasted almonds. Serve and enjoy!
