1/2
Keto Garlic Rolls
Instructions
1
Preheat the oven to 400°F. Spray a 9-inch square baking pan with nonstick cooking spray. Set aside.
2
Place the shredded mozzarella cheese and cream cheese in a microwave-safe bowl. Microwave on high in 20-second increments, stirring between each, until cheese is melted and smooth.
3
Combine the melted cheese, eggs, almond flour, Parmesan, garlic powder, baking powder, and salt in a large mixing bowl. Use a wooden spoon to thoroughly mix ingredients together, working until they are fully combined into a thick dough.
4
With slightly dampened hands, divide and shape the mixture into balls (about 12 per batch) and arrange them in the prepared baking dish. Brush tops of balls with the melted butter, and sprinkle with the Italian seasoning and Parmesan cheese.
5
Bake the rolls on middle rack of oven until puffed and golden brown on top, 25-30 minutes.
6
Check to see that rolls are done. Remove from oven or add time as needed.
7
Allow the rolls to cool for 15-20 minutes before serving.

Tips & Tricks (5)
- Microwave Your Cheese Base First 🧀Microwave the mozzarella and cream cheese together for 1-2 minutes before mixing, ensuring they're fully melted and creating a smoother, more cohesive dough that's easier to work with.
- Toast Your Almond Flour 🥜Lightly toast the almond flour in a dry pan for 2-3 minutes before adding it to the dough to enhance its nutty flavor and reduce the raw almond taste common in keto baking.
- Use Both Garlic Forms for Depth 🧄Combine garlic powder in the dough with fresh minced garlic mixed into the butter topping to create complex flavor layers that won't fade during baking.
- Don't Overmix the Dough ⚖️Stir just until ingredients combine (about 30 seconds) to keep rolls light and fluffy; overmixing develops gluten in almond flour and creates dense, chewy results.
- Brush Butter While Still Warm 🔥Apply your garlic butter immediately after removing rolls from the oven while they're steaming to maximize absorption and create that signature garlic bread richness.
