Instructions
1
Preheat oven to 350F. Grease a small baking dish with cooking spray.
2
In a mixing bowl, combine oat flour, protein powder, cocoa powder, baking powder. and salt. Stir until combined.
3
Add in almond milk, applesauce, maple syrup, and vanilla extract and stir until combined and smooth. Taste and add more sweetener if desired. Add more milk if needed, 1 tablespoon at a time, until it reaches a smooth cake batter-like consistency.
4
Pour about three-quarters of the batter into the prepared baking dish. Add the piece of chocolate to the center. Cover with the remaining batter and smooth out the top.
5
Bake for about 20 minutes for a cake-like texture. If you like the texture of the oats to be more molten and gooey, then bake for 15 minutes. Let cool slightly. Serve in the baking dish or flip onto a plate. Dust with powdered sugar and strawberries and dig in!

Tips & Tricks (5)
- Create the Molten Center 🍫Place a piece of dark chocolate or truffle in the center of your batter before baking, then underbake by 1-2 minutes so the chocolate stays gooey while the oats set around it for that signature lava cake effect.
- Balance Moisture Perfectly 💧Use applesauce or yogurt as your wet base rather than just milk alone—this adds richness and prevents the oats from drying out while keeping the recipe healthier than traditional cake.
- Bloom Your Cocoa Powder 🤎Mix cocoa powder with a splash of hot almond milk before adding to batter to bloom it and intensify the chocolate flavor, eliminating any bitter raw cocoa taste.
- Room Temperature Ingredients 🌡️Bring protein powder, applesauce, and milk to room temperature before mixing to ensure smooth incorporation and prevent lumps that affect texture and the molten center consistency.
- Strategic Sweetener Layering 🍁Mix maple syrup into the wet ingredients rather than dry ones, and reserve a teaspoon to drizzle over the baked oats just before serving to enhance the decadent chocolate flavor without crystallization.
