Instructions
- Preheat oven to 425°F (220°C). Toss cubed potatoes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until golden and crispy.
- In a bowl or bag, combine chicken with olive oil, lemon juice, garlic, oregano, parsley, salt, and pepper. Marinate for at least 10–15 minutes.
- Cook chicken in a skillet or on a grill over medium heat for 6–8 minutes per side, or until cooked through and golden brown. Let rest before slicing.
- In a small bowl, whisk together Greek yogurt, olive oil, lemon juice, dill, garlic, and salt. Add water a little at a time to reach desired consistency.
