Ingredients

  • 2 - boneless skinless chicken breasts
  • 1 tbsp - olive oil
  • lemon pepper
  • 2 - lemons
  • 1 tbsp - butter
  • 1 tbsp - flour
  • 1 cup - chicken stock
  • 1 tbsp - lemon juice

Instructions

  1. Preheat the oven to 375 degrees.
  2. Brush olive oil on both sides of the chicken.
  3. Sprinkle lemon pepper over both sides of the chicken. Place in a 9 inch casserole dish.
  4. Slice the lemons, and place on top of chicken, and inside the casserole dish.
  5. Bake for 25 minutes, or until chicken is cooked through.
  6. Allow chicken to rest for 5 minutes while you make the sauce
  7. In the same pan, melt butter over medium high heat.
  8. Stir flour into the melted butter, cooking for 1 minute.
  9. Whisk in the chicken stock, scraping up any bits from the bottom of the pan.
  10. Add lemon juice and simmer for 3-5 minutes, or until sauce has thickened slightly.
  11. Season with salt and pepper to taste.
  12. Drizzle sauce over prepared chicken.
