  • 1 cup - cooked french lentils
  • 1 - bell pepper
  • 1 - red onion
  • 1 - sweet potato
  • ½ cup - goat cheese
  • ¼ cup - sunflower seeds
  • 2 tablespoons - olive oil
  • 1 tbsp - olive oil
  • ½ tsp - salt
  • ½ tsp - Red pepper flakes
  • ¼ tsp - ground pepper
  • 3 cups - water
  • handful - Handful of chopped fresh herbs
  • 3 tablespoons - Tahini
  • 2 tablespoons - lemon juice
  • ¼ tsp - salt
  • ¼ tsp - black pepper
  • 4–5 tablespoons - ice water

Instructions

  1. In a medium saucepan, combine the rinsed lentils and 3 cups water.
  2. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes or until lentils are tender but not mushy.
  3. Drain any excess water and season with olive oil, salt, red pepper flakes, and black peppers.
  4. Preheat the oven to 400°F (200°C).
  5. Toss the cubed sweet potatoes with a drizzle of olive oil, salt, and pepper.
  6. Roast for 20-25 minutes or until golden and tender, stirring halfway through.
  7. In another bowl, mix together tahini, water, lemon juice, and salt until well combined. Adjust consistency with more cold water if needed.
  8. Add cooked lentils, roasted sweet potatoes, chopped bell pepper, red onion slices, fresh herbs, crumbled goat cheese, and sunflower seeds in each serving bowl.
