Ingredients

  • 2 cups - French lentils
  • 4 ounces - feta
  • 1 cup - pomegranate
  • 1 cup - cilantro
  • ¼ - mint
  • ¼ - red onions fresh or pickled
  • 1 - jalapeno
  • 4 tablespoons - lime juice
  • 1 - lime zest
  • 3 tablespoons - olive oil
  • 1 tsp - cumin
  • 1 tsp - coriander
  • 2 tablespoons - honey
  • ½ - salt
  • ¼ - ground pepper
  • 1 head - bibb lettuce

Instructions

  1. Cook the lentils.
  2. Make the dressing by combining the lime juice, zest of lime, olive oil, cumin , coriander, honey, salt and pepper.
  3. Combine the cooked lentils, crumble feta, pomegranate, chopped cilantro, chopped mint, chopped onion, chopped jalapeno and dressing.
  4. Serve in lettuce wraps.
