Ingredients
- 2 cups - French lentils
- 4 ounces - feta
- 1 cup - pomegranate
- 1 cup - cilantro
- ¼ - mint
- ¼ - red onions fresh or pickled
- 1 - jalapeno
- 4 tablespoons - lime juice
- 1 - lime zest
- 3 tablespoons - olive oil
- 1 tsp - cumin
- 1 tsp - coriander
- 2 tablespoons - honey
- ½ - salt
- ¼ - ground pepper
- 1 head - bibb lettuce
Instructions
- Cook the lentils.
- Make the dressing by combining the lime juice, zest of lime, olive oil, cumin , coriander, honey, salt and pepper.
- Combine the cooked lentils, crumble feta, pomegranate, chopped cilantro, chopped mint, chopped onion, chopped jalapeno and dressing.
- Serve in lettuce wraps.
