
Lime Cilantro Vinaigrette
This vinaigrette is anything but boring. Packed with lots of fresh cilantro, infused with jalapeno and cumin, and a bright acid flavor from a lot of freshly squeezed lime juice. Bright and fresh, this lime Cilantro Vinaigrette is simple and a great addition to any salad. You could also use this as a marinade. Great in green salad and grain bowls, you can also drizzle over roasted vegetables, grilled fish, or meat.

Ingredients
- ⅓ cups - lime juice
- 2 teaspoons - honey
- 1 clove - garlic
- ½ tsp - cumin
- 2 tablespoons - olive oil
- 2 teaspoons - cilantro
- ½ tsp - salt
- ½ tsp - pepper
- 1 - fresh jalapeno
Instructions
- Start by removing the cilantro leaves from the stem until you have enough. Next, slice your jalapeño in half and remove the seeds and membranes. Chop the two halves into small chunks. Use an immersion blender to fully combine the lime juice, honey, crushed garlic, cumin, olive oil, cilantro, salt, fresh ground pepper, and chopped jalapeno creating this delicious vinaigrette.
