Tips & Tricks (5)
- Reserve Pasta Water for Silky Sauce 💧Save 1-2 cups of starchy pasta water before draining and use it to adjust your cheese sauce consistency—it emulsifies beautifully and prevents the sauce from becoming too thick or gluey.
- Velveeta is Your Secret Weapon 🧀The emulsifying salts in Velveeta prevent the cheese sauce from breaking or becoming grainy when combined with heavy cream and other cheeses, ensuring a velvety smooth texture every time.
- Fold in Lobster Last for Tender Meat 🦞Add lobster meat at the very end after combining pasta with the cheese sauce to prevent overcooking and keep it tender and sweet rather than rubbery.
- Toast Your Breadcrumb Topping 🟤Toss breadcrumbs with melted butter and a pinch of paprika before sprinkling on top, then bake separately for 3-4 minutes first to ensure they stay golden and crispy rather than soggy.
- Bloom Your Seasonings in Butter 🧈Sauté garlic powder and onion powder in butter for 30 seconds before building your cheese sauce to activate their flavors and distribute them evenly throughout the dish.
