This healthy dessert is a lighter twist on the classic German-style chocolate cheesecake, combining an incredibly creamy quark and yogurt filling with a crunchy chocolate base and chocolate crumble topping. Unlike the traditional version, this one uses smarter ingredients—such as oats, dates, and rapeseed oil—to reduce sugar and saturated fat, while still keeping the rich, indulgent flavor. Served chilled, the cake offers a perfect balance of creamy texture and subtle chocolate crunch, and it can be stored in the refrigerator for up to seven days.

Instructions

1
|
Preheat the oven to 140°C using top/bottom heat.
2
|
Pit and roughly chop the dates, then process them in a food processor together with the rolled oats and cocoa powder. Add the egg, egg yolk, and oil, and continue processing until a sticky, slightly lumpy dough forms.
3
|
Place 2/3 of the dough into the tin (greased and lined with baking paper), spread it with your fingers and flatten it on the bottom.
4
|
Mix the low-fat quark, yogurt, cream cheese, cornstarch, and powdered sugar until smooth using a hand mixer or whisk. Spread the quark mixture onto the base, smooth it out, and then distribute the remaining chocolate batter on top in small flakes.
5
|
Bake the crumb cake in a preheated oven for approximately 50 minutes. Allow the cake to cool at room temperature for at least 30 minutes to 1 hour before serving, then refrigerate for another hour. Only then should you remove the cake from the pan.

Tips & Tricks (5)

  • Quark Consistency Magic 🥛
Bring quark and cream cheese to room temperature before mixing to ensure a smooth, lump-free cheesecake filling with perfect creamy texture.
  • Date Crust Pro Tip 🍪
Soak Medjool dates in warm water for 10 minutes before blending with oats to create a more pliable, easily-pressed crust base with enhanced binding.
  • Cocoa Powder Hack 🍫
Sift cocoa powder through a fine-mesh strainer to prevent clumping and ensure an even, smooth distribution throughout the chocolate crumble topping.
  • Chill Time Optimization ❄️
Allow the cheesecake to cool completely at room temperature before refrigerating to prevent condensation and maintain the perfect creamy texture.
  • Low-Fat Binding Technique 🥄
Use cornstarch as a secret weapon to help stabilize the low-fat dairy ingredients and prevent separation during baking and chilling.
