Low Calorie High Protein Beef Taquitos
Instructions

Preheat oven to 350°F (175°C).

In a skillet over medium heat, cook ground beef until browned. Drain excess fat.

Add taco seasoning and a splash of water, then stir to combine. Simmer for a few minutes.

Remove from heat and stir in Greek yogurt, cheese, and green chilies until well mixed.

Warm 5 tortillas at a time: wrap in a damp paper towel, then in foil, and bake for 10 minutes to soften.

Spoon filling into each tortilla, roll tightly, and place seam-side down on a baking sheet.

Spray tops lightly with oil and bake for 15–20 minutes until crispy and golden.

Serve with optional hot sauce, low-cal ranch, and chives.
