Tips & Tricks (5)
- Pre-dry Tortillas for Maximum Crispiness 🌯Lightly toast corn tortillas in a dry skillet for 30 seconds per side before filling to remove excess moisture, allowing them to crisp perfectly when baked instead of becoming chewy.
- Greek Yogurt Substitution for Moisture Control 🥛Mix nonfat Greek yogurt directly into the cooked ground beef filling to add creaminess and bind ingredients while keeping calories minimal—this reduces the need for excess cheese and oil.
- Drain Ground Beef Thoroughly for Better Texture 💧After browning lean ground beef, drain it in a fine-mesh strainer and pat dry with paper towels to remove all excess fat, ensuring a firmer filling that holds together better in the taquito.
- Freeze Taquitos Before Baking for Structural Integrity ❄️After rolling and sealing taquitos, freeze them for at least 30 minutes before baking; this prevents them from unraveling and allows the filling to stay contained while the exterior crisps beautifully.
- Season Beef Before Assembly for Flavor Depth 🌶️Add taco seasoning to the cooked beef and let it rest for 2-3 minutes, then fold in green chilies and Greek yogurt—this prevents the spices from becoming diluted and ensures even flavor distribution throughout.
