Low-Calorie Mashed Potatoes

Wash the potatoes thoroughly, halve or quarter them depending on their size, and place them in a pot.

Cover with water and bring to a boil. Then reduce the heat and let simmer with the lid half closed for 25 minutes, or until the potatoes are tender.
Prepare the Potatoes

Drain the potatoes, let them cool for one to two minutes, and peel if necessary. Then mash the potatoes in the pot with a potato masher, gradually adding the milk.

Season the mashed potatoes generously with salt, pepper, and a pinch of nutmeg, and enhance with fresh herbs as desired.
