Tips & Tricks (5)
- Separate Your Marshmallows 🍀Before adding Lucky Charms marshmallows to the dough, spread them on parchment paper and freeze for 15 minutes so they maintain their shape and don't dissolve into the batter.
- Brown Your Butter First 🧈Melt unsalted butter over medium heat until golden brown (about 5-7 minutes), then cool slightly before creaming with sugars to add a rich, nutty depth that elevates the entire cookie.
- Don't Overmix Your Gluten-Free Flour 🌾Mix wet and dry ingredients just until combined—overmixing gluten-free flour develops density and toughness, resulting in dense cookies instead of the desired soft, buttery texture.
- Underbake for Maximum Softness ⏱️Remove cookies from the oven when the edges are set but the center still looks slightly underdone (about 1-2 minutes before they appear fully baked), as they continue cooking on the hot baking sheet for a perfectly soft interior.
- Toast Your Sea Salt 🧂Lightly toast the sea salt in a dry pan for 30 seconds before adding to the dough to intensify its mineral flavor and create a sophisticated contrast to the sweet marshmallows.
