Ingredients
- ½ cup - unsalted butter
- ½ cup - granulated sugar
- ½ cup - light brown sugar
- 1 tsp - vanilla extract
- 1 - egg
- 1 ½ cups - gluten free flour
- 1 tsp - baking soda
- ½ tsp - sea salt
- 1 cup - Lucky Charms marshmallows
Instructions
- First, preheat your oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper.
- In the bowl of a stand mixer, add the softened butter, sugar, and brown sugar. Beat until creamy and no clumps of butter remain.
- Then, add in the egg and vanilla. Stir to combine.
- Add in the flour, baking soda, and sea salt. Stir to combine.
- Fold in the Lucky Charms marshmallows.
- Use a cookie scooper to scoop balls of dough onto the prepared pan. Space at least 3 inches apart.
- Bake for 8 to 10 minutes, until the edges are lightly golden.
- Finally, remove the pan from the oven. Allow the Lucky Charms marshmallows to cool for 10 minutes before removing to a cooling rack.
