Maple Sweet Potatoes

Instructions

Preheat oven to 450ºF.

Peel sweet potatoes and trim off both ends. Slice sweet potatoes into ½ inch thick slices.

Melt ½ cup of butter and add to a large bowl; Add potato slices and stir until coated.

Arrange potato slices on a rimmed baking sheet in a single layer; Pour remaining melted butter from the bowl over the potatoes slices.

Sprinkle with ½ teaspoon of All Purpose Seasoning Blend.

Roast potatoes for 15 minutes.

Flip potatoes, sprinkle with ½ teaspoon of All Purpose Seasoning Blend.

Continue roasting for 10 minutes or until potatoes are golden brown.

Add stock to baking sheet and roast for 10 more minutes or until most of the broth is evaporated.

While potatoes are roasting, in a small saucepan over medium heat, combine walnuts, syrup, remaining ¼ cup butter and ½ teaspoon of All Purpose Seasoning Blend.

Simmer and stir until the butter emulsifies; Remove from heat.

Transfer potatoes to a platter and drizzle with syrup and walnut mixture right before serving.
