Ingredients
- ¾ cup - Unsalted butter
- 2 ½ pounds - Sweet potato
- 1 ½ teaspoons - All Purpose Seasoning
- ¼ cup - Chicken broth or stock
- ½ cup - Walnut pieces
- 2 tablespoons - Pure maple syrup
Instructions
- Preheat oven to 450ºF.
- Peel sweet potatoes and trim off both ends. Slice sweet potatoes into ½ inch thick slices.
- Melt ½ cup of butter and add to a large bowl; Add potato slices and stir until coated.
- Arrange potato slices on a rimmed baking sheet in a single layer; Pour remaining melted butter from the bowl over the potatoes slices.
- Sprinkle with ½ teaspoon of All Purpose Seasoning Blend.
- Roast potatoes for 15 minutes.
- Flip potatoes, sprinkle with ½ teaspoon of All Purpose Seasoning Blend.
- Continue roasting for 10 minutes or until potatoes are golden brown.
- Add stock to baking sheet and roast for 10 more minutes or until most of the broth is evaporated.
- While potatoes are roasting, in a small saucepan over medium heat, combine walnuts, syrup, remaining ¼ cup butter and ½ teaspoon of All Purpose Seasoning Blend.
- Simmer and stir until the butter emulsifies; Remove from heat.
- Transfer potatoes to a platter and drizzle with syrup and walnut mixture right before serving.
