Simmer for 10-15 minutes or until the sweet potatoes are tender, then drain completely in a colander. 3 lbs. sweet potatoes,1/3 cup half and half,4 tablespoons unsalted butter,1 tablespoon orange zest,2 tablespoons freshly chopped rosemary,Salt and pepper
