Matcha Mint Chocolate Chip Energy Bites
Inspired by the popular ice cream flavor, these mint chocolate chip energy bites with matcha are the perfect afternoon snack! These little bites of goodness are seriously mind blowing. They're high in protein and nutrient dense, with ingredients like almond flour, cashew butter, and energizing matcha green tea powder. The flavor is on point, and the crunch from the cacao nibs is just divine.

Instructions
- Step 1
In a medium mixing bowl, stir together almond flour, protein powder, matcha, blue spirulina if using, and salt.
- Step 2
Add in cashew butter, maple syrup, vanilla extract, and peppermint extract and stir until well combined, using your hands to mix if needed.
- Step 3
Add in chocolate chips and cacao nibs and combine well.
- Step 4
Roll into balls. Enjoy right away or place in the fridge for 1 hour to firm up.
