In a bowl or jar, combine all ingredients for the overnight oats and, if using, vanilla protein powder. Stir well until thoroughly mixed. Cover and place in the fridge overnight or at least 4 hours.

When ready to serve, check for desired thickness - stir in a couple tablespoons more soy milk if desired. If using protein powder, the overnight oats will be thicker.

Add chocolate chips and coconut oil to a small bowl and microwave in 30 second intervals, stirring in between, until melted and smooth. Pour and spread over the overnight oats. Sprinkle with flaky sea salt if desired. Place in the freezer for 10 minutes, or until chocolate has hardened. Crack the chocolate shell and enjoy!
