Meatloaf Meatballs

These meatloaf meatballs are a fun way to enjoy meatloaf! They're super easy to whip up, and who doesn't love bite-sized foods! Meatloaf Meatballs have everything you’d expect to find in a classic meatloaf but packaged into delicious bite-sized portions. They’re super kid-friendly and not to mention absolutely delicious!

Ingredients

  • ½ - onion
  • ½ - bell pepper
  • 1 clove - garlic
  • 1 lb - ground turkey
  • ½ tsp - Italian herbs
  • ½ tsp - kosher salt

Instructions

  1. Preheat the oven to 375F degrees.
  2. Heat the oil in a saute pan over medium heat.
  3. Add the onions, bell pepper, and garlic, and cook for 5 minutes, until the veggies are soft.
  4. Remove the veggies from the heat and allow to cool.
  5. In a bowl, mix together the cooled veggies, ground turkey, italian herbs and salt, until well combined.
  6. Using a 1 tablespoon measure, form the mixture into meatballs, and place in a greased baking dish.
  7. Bake for 20 minutes, until cooked through.
  8. Note: You can also sauté the meatballs over medium heat for 4-5 minutes, shaking the pan occasionally, and cover for 1 additional minute.
