Ingredients

  • ½ - English cucumber
  • ¾ cup - plant-based plain yogurt
  • 1 tbsp - extra virgin olive oil
  • 1 tbsp - lemon juice
  • 1 clove - garlic
  • 2 tablespoons - dill
  • ½ tsp - salt
  • 1 tbsp - extra virgin olive oil
  • 4 - mushroom quinoa veggie burgers
  • 1 tsp - oregano
  • 4 - hamburger buns
  • ½ cup - dairy-free cheese feta crumbles
  • 1 - tomato
  • ½ - English cucumber
  • 1 - red onion
  • 1 cup - arugula

Instructions

  1. Start by making the tzatziki. Grate the cucumber on the large holes of a box grater. No need to peel the cucumber. Place the cucumber on a towel and gently squeeze out the excess water.
  2. In a medium bowl, combine the grated cucumber, yogurt, olive oil, lemon juice, garlic, dill and/or mint, and salt. Stir until well combined. Taste and add additional lemon juice, herbs, and/or salt if necessary. Chill until ready to use.
  3. Heat olive oil in a large skillet over medium heat. Season veggie burger patties with oregano. Once oil is hot, add the patties and cook for 3-5 minutes on each side, or until browned and firmed up.
  4. Top patties with feta to lightly melt. Warm or toast buns.
  5. Spread the tzatziki on the top and bottom buns, then assemble burgers with sliced tomato, cucumber, red onion, and arugula. Serve immediately and enjoy!
