Mediterranean White Bean Skillet
This white bean skillet features white beans in an aromatic tomato sauce with Parmesan cheese and spinach. This recipe is ready in just fifteen minutes, making it perfect when you're short on time. Be sure to serve this quick one-pan dish with some fresh bread, such as ciabatta, baguette or pita, and if possible with fresh basil.

- Step 1
Peel and finely dice the shallots and garlic, wash and halve the tomatoes.
- Step 2
Place oil, shallots and garlic in a pan, heat slowly over medium-high heat until the onions begin to become slightly translucent.

Add the halved tomatoes, crumble the bouillon cube over the pan with your fingers, and sauté everything for two to three minutes over medium heat. Meanwhile, drain and thoroughly rinse the beans.

Add the beans to the pot and deglaze with water. Add the Parmesan rind and simmer the bean mixture for 5 to 8 minutes over medium-high heat. Meanwhile, wash the basil and spinach, finely slice the basil leaves, and grate the Parmesan.
- Step 5
Once the sauce in the pan has reduced by about half and thickened nicely, reduce the heat, remove the Parmesan rind, and stir in the spinach and grated Parmesan. Season with lemon juice, pepper, and (if necessary) a little salt.
- Step 6
Divide the bean dish between two plates, garnish with basil and serve with bread of your choice.
