Instructions

1
|
Peel and finely dice the shallots and garlic, wash and halve the tomatoes.
2
|
Place oil, shallots and garlic in a pan, heat slowly over medium-high heat until the onions begin to become slightly translucent.
3
|
Add the halved tomatoes, crumble the bouillon cube over the pan with your fingers, and sauté everything for two to three minutes over medium heat. Meanwhile, drain and thoroughly rinse the beans.
4
|
Add the beans to the pot and deglaze with water. Add the Parmesan rind and simmer the bean mixture for 5 to 8 minutes over medium-high heat. Meanwhile, wash the basil and spinach, finely slice the basil leaves, and grate the Parmesan.
5
|
Once the sauce in the pan has reduced by about half and thickened nicely, reduce the heat, remove the Parmesan rind, and stir in the spinach and grated Parmesan. Season with lemon juice, pepper, and (if necessary) a little salt.
6
|
Divide the bean dish between two plates, garnish with basil and serve with bread of your choice.

Tips & Tricks (5)

  • Bean Prep Perfection 🫘
If using canned white beans, always rinse thoroughly to remove excess sodium and improve flavor clarity in the final dish.
  • Garlic Infusion Technique 🧄
Slice garlic thinly and sauté in olive oil just until it becomes fragrant, being careful not to brown, to prevent bitterness.
  • Tomato Burst Magic 🍅
Gently press cherry tomatoes with the back of a wooden spoon while cooking to release their natural sweetness and create a more complex sauce.
  • Cheese Melting Mastery 🧀
Grate Parmesan cheese fresh and sprinkle it off the heat to prevent separation and maintain its delicate texture.
  • Fresh Herb Finishing Flourish 🌿
Tear fresh basil leaves by hand just before serving to release their oils and maximize aromatic impact in the dish.
