Instructions
1
Peel and finely dice the shallots and garlic, wash and halve the tomatoes.
2
Place oil, shallots and garlic in a pan, heat slowly over medium-high heat until the onions begin to become slightly translucent.
3
Add the halved tomatoes, crumble the bouillon cube over the pan with your fingers, and sauté everything for two to three minutes over medium heat. Meanwhile, drain and thoroughly rinse the beans.
4
Add the beans to the pot and deglaze with water. Add the Parmesan rind and simmer the bean mixture for 5 to 8 minutes over medium-high heat. Meanwhile, wash the basil and spinach, finely slice the basil leaves, and grate the Parmesan.
5
Once the sauce in the pan has reduced by about half and thickened nicely, reduce the heat, remove the Parmesan rind, and stir in the spinach and grated Parmesan. Season with lemon juice, pepper, and (if necessary) a little salt.
6
Divide the bean dish between two plates, garnish with basil and serve with bread of your choice.

Tips & Tricks (5)
- Toast Your Garlic and Shallots 🧄Sauté minced garlic and shallots in olive oil for 1-2 minutes before adding other ingredients to develop a rich, caramelized base that intensifies the entire dish's flavor profile.
- Bloom the Bouillon Cube Properly 💧Dissolve the bouillon cube directly into a small amount of hot water first, then add to the skillet—this ensures even seasoning distribution and prevents clumpy spots throughout the sauce.
- Reserve Basil for the Finish 🌿Tear fresh basil leaves by hand and stir them in during the final 30 seconds of cooking to preserve their vibrant flavor and aromatic oils that cooking destroys.
- Don't Overcook the Spinach 🥬Add spinach in the last minute of cooking while the skillet is off heat—the residual warmth wilts it perfectly while maintaining its bright color and delicate texture.
- Use Fresh Lemon Juice Strategically 🍋Add half the lemon juice to the sauce for acidity that brightens flavors, then reserve the rest to drizzle on individual servings so guests can adjust brightness to their preference.
