Ingredients

  • 20 ounces - Hash browns
  • 1 - Onion
  • 1 - Red pepper
  • 12 - Eggs
  • ½ cup - Milk
  • 4 ounces - green chilies
  • 2 cups - Cheddar cheese
  • ½ tsp - Chili powder
  • ½ tsp - Cumin
  • ¼ tsp - All Purpose Seasoning Blend

Instructions

  1. Preheat oven to 350 and prepare a 9 x 13 baking dish with cooking spray.
  2. Add hash browns to bottom of dish and sprinkle with house season blend.
  3. Sprinkle the onion and red pepper over the potatoes. Add half the green chiles and about half of the cheese to the top.
  4. In a bowl, mix the eggs, milk, chili powder, cumin and remaining green chiles.
  5. Pour over the potato and vegetable mixture, then top with the rest of the cheese.
  6. Bake at 350 degrees for 45-55 minutes. Check for doneness by inserting a knife in the center.
