Tips & Tricks (5)
- Marinate for Maximum Tenderness ⏱️Marinate chicken for at least 4-6 hours, or ideally overnight, to allow the acid from lime juice and oil to fully penetrate and tenderize the meat while developing deep flavor.
- Toast Your Spices First 🔥Lightly toast the cumin, oregano, and chili powder in a dry pan for 30 seconds before adding to the marinade to unlock their essential oils and intensify their complex flavors.
- Use Fresh Garlic and Cilantro 🧄Mince fresh garlic and roughly chop cilantro just before mixing to preserve their potent aromatics; pre-cut versions lose volatile compounds that make this marinade restaurant-quality.
- Reserve Marinade for Basting 🎯Set aside a portion of raw marinade before adding chicken, then use it to baste the meat while cooking to continuously build layers of flavor and prevent drying.
- Pat Dry Before Cooking 💧Remove chicken from marinade and pat completely dry with paper towels 15 minutes before cooking to achieve a golden, caramelized crust while locking in the marinade's flavors.
