Mexican Chicken Tater Tot Casserole
This delicious Mexican Chicken Tater Tot Casserole is my families favorite mexican make at home meal. This easy one-pan recipe is packed with flavor from chicken breast, taco seasoning, corn, black beans, Rotel, sour cream, and cheese, all topped with crispy tater crowns. It’s a Taco Tuesday upgrade.

- Step 1
Preheat oven to 400F. Place oil in a large skillet over medium heat.
- Step 2
Add minced garlic, chili powder, onion powder, coriander, cumin and All Purpose Seasoning. Stir for 30-60 seconds or until fragrant.
- Step 3
Add chicken and All Purpose Seasoning and stir until completely combined.
- Step 4
Stir in corn, black beans, tomatoes, sour cream and 1/2 cup shredded cheese.
- Step 5
Top with remaining shredded cheese, then a layer of tater tots.
- Step 6
Bake at 400F for 35-45 minutes until tater tots are golden and crispy.
