
Mexican Chicken Tater Tot Casserole
This delicious Mexican Chicken Tater Tot Casserole is my families favorite mexican make at home meal. This easy one-pan recipe is packed with flavor from chicken breast, taco seasoning, corn, black beans, Rotel, sour cream, and cheese, all topped with crispy tater crowns. It’s a Taco Tuesday upgrade.

Ingredients
- 2 tablespoons - Olive oil
- 3 cloves - Garlic
- 2 teaspoons - Chili powder
- 1 tsp - Onion powder
- 1 tsp - Dried coriander
- 1 tsp - Cumin
- ½ tsp - all-purpose seasoning
- 1 lb - chicken
- 15 ¼ ounces - Corn
- 15 ¼ ounces - Black beans
- 10 ounces - Rotel tomatoes
- 1 cup - Sour cream
- 2 cups - Cheddar cheese
- 28 ounces - Tater tots
Instructions
- Preheat oven to 400F. Place oil in a large skillet over medium heat.
- Add minced garlic, chili powder, onion powder, coriander, cumin and All Purpose Seasoning. Stir for 30-60 seconds or until fragrant.
- Add chicken and All Purpose Seasoning and stir until completely combined.
- Stir in corn, black beans, tomatoes, sour cream and 1/2 cup shredded cheese.
- Top with remaining shredded cheese, then a layer of tater tots.
- Bake at 400F for 35-45 minutes until tater tots are golden and crispy.
