This moist and healthy banana bread combines pumpkin puree, ripe bananas, and warm spices for a naturally sweet and tender loaf. Made with whole grain flour and a touch of brown sugar, it’s a wholesome treat that’s perfect for autumn and winter. You can top it with chopped walnuts or dark chocolate for extra indulgence, and pumpkin puree is easy to find online or in many large supermarkets.

Instructions

1
|
Preheat oven to 180°C (350°F) using conventional oven settings (top and bottom heat). Grease a loaf pan with butter. In a separate bowl, combine flour, baking soda, and spices. Peel the bananas and mash them into a smooth puree using a fork on a plate.
2
|
Place butter, white and brown sugar in a mixing bowl and mix with a hand mixer for 3 to 5 minutes until a creamy mixture is formed.
3
|
Crack the eggs, add them to the butter and sugar mixture, and stir briefly. Then add the mashed bananas, pumpkin puree, and yogurt, and stir briefly again.
4
|
Gently stir the flour mixture into the batter in two or three stages at the slowest speed until the dry and liquid ingredients are completely combined and lump-free. Then, if desired, fold in walnuts and/or chocolate using a spatula.
5
|
Pour the batter into the prepared loaf pan, smooth the surface and bake in the oven at 180°C (top/bottom heat) for 60 to 70 minutes.
6
|
(Tip: Check the banana bread after about 50 minutes. If the surface gets too dark, you can cover it with aluminum foil.)
7
|
Remove the banana bread from the oven as soon as a toothpick inserted into the center can be pulled out without any batter sticking to it. Let the banana bread cool in the pan, then turn it out onto a cooling rack or plate and serve while still slightly warm.

Tips & Tricks (5)

  • Banana Ripeness Matters 🍌
Use ultra-ripe bananas with deep brown or black spots for maximum natural sweetness and moisture in your bread.
  • Greek Yogurt Magic 🥛
Choose a 5-10% fat Greek yogurt to add incredible moisture and a subtle tanginess that enhances the bread's texture.
  • Spice Bloom Technique 🌶️
Gently toast cinnamon and pumpkin spice in a dry pan for 30 seconds before adding to the mix to intensify their aromatic qualities.
  • Moisture Prevention Hack 💧
Pat pumpkin puree with paper towels to remove excess moisture and prevent a dense, soggy bread texture.
  • Chocolate Distribution Pro Tip 🍫
Toss dark chocolate chunks in a tablespoon of flour before folding into the batter to prevent them from sinking during baking.
