This is a super easy Mustard Shallot Dressing to make and I normally have the ingredients around the house. Shallots are mild but flavorful, making this a really versatile dressing.

Ingredients
- 2 - Shallots
- 2 tablespoons - lemon juice
- ½ cups - Apple Cider Vinegar
- 4 tablespoons - Dijon mustard
- 2 tablespoons - honey
- 1 tsp - salt
- 6 tablespoons - olive oil
Instructions
- First chop the shallot.
- Use an immersion blender to combine all of the ingredients.
- Store in a jar in the refrigerator for up to six months.
