Ingredients
- ½ cup - rolled oats
- ¼ cup - chocolate protein powder
- 2 tablespoons - almond butter
- 3–4 tablespoons - applesauce
- 2 teaspoons - baking cocoa
- ⅓ cup - semi sweet chocolate chips
- 5 - medjool dates
- 1 tsp - coconut oil
Instructions
- Pit the dates and add them to a food processor along with the oats, protein powder, almond butter, applesauce, and cocoa powder. Pulse several times until the oats are coarsely chopped and the mixture is crumbly but holds together when pressed between your fingers.
- Using your hands, shape the mixture into 12 to 13 evenly sized balls and place them on a plate or baking sheet. For evenly sized portions, use about 20 grams of mixture per ball.
- Melt the chocolate chips and coconut oil together in the microwave or using a double boiler, stirring until completely smooth.
- Dip each brownie ball into the melted chocolate, turning until evenly coated. Transfer to a sheet of parchment paper and let the chocolate set completely.
- Once the chocolate has set, transfer the brownie balls to an airtight container and store them in the refrigerator for up to 2 weeks.
