No-Stir Risotto

Preheat the oven to 180°C (350°F). Peel and finely dice the shallot and garlic. Cut the sun-dried tomatoes into thin strips, measure out the rice and wine, and prepare the vegetable stock.

Pour olive oil into the pot and sauté the diced onion and garlic with a little salt until translucent. Add the sugar, tomato paste, and sun-dried tomatoes and sauté for another minute.

Add the rice to the pot and sauté for 30 to 60 seconds, stirring constantly, until translucent. Deglaze with white wine. Allow the alcohol to evaporate (this takes about one to two minutes, or until the smell of alcohol disappears), then pour in all the broth.

Stir the risotto well and place it in the preheated oven with the lid closed for 25 minutes.

Meanwhile, prepare optional ingredients: Wash and halve the tomatoes, wash the spinach. About five minutes before the end of the cooking time, sauté the shrimp in olive oil in a pan for three to four minutes.

Remove the risotto from the oven and stir in the Parmesan and ricotta. Mix in optional ingredients (tomatoes, spinach, shrimp) and season the risotto with salt and pepper.
