This oatmeal cookie inspired smoothie tastes like a freshly baked oatmeal cookie crammed into a glass. It's made in just 10 minutes with no banana and packs over 30 grams of protein! Ingredients
- 2 - whole Medjool Dates
- ¾ cup - Cauliflower Rice
- ⅔ cup - Soy Milk, or any non-dairy milk
- ¼ cup - Vanilla Protein Powder
- ¼ cup - Gluten-Free Rolled Oats
- 1 tbsp can - Cashew Butter sub peanut or almond butter
- ½ tsp - Vanilla Extract
- ¼ tsp - Cinnamon
- 1 pinch - Salt
Instructions
- First, soak your pitted dates in a small bowl of very warm water for at least 5 minutes. This will help them soften up for easier blending.
- While the dates are soaking, add all remaining ingredients to a high powered blender. Add in soaked dates.
- Blend until smooth and until the dates and oats are fully broken down, about 1 minute. Add more soy milk to reach your desired consistency, if necessary. Pour into a glass and enjoy!
