Instructions
1
Preheat the oven to 350°F. Spray the insides of a muffin pan with cooking spray or brush with melted coconut oil. If using a silicone muffin pan, you can skip this step.
2
In a medium mixing bowl, add the mashed bananas, oats, maple syrup, melted coconut oil, cinnamon, and salt. Stir until well combined.
3
Add the oat mixture to the muffin pan, using about 1/4 cup per well. Use a spoon to press the mixture into the bottom and sides, creating a cup shape.
4
Bake for 30 minutes or until lightly golden brown. Let cool for about 5 minutes before removing from the pan to cool completely on a wire rack.
5
Fill each oatmeal cup with yogurt, and top with berries, coconut flakes, and cacao nibs. Enjoy!

Tips & Tricks (5)
- Toast Your Oats First 🌾Lightly toast the oats in a dry skillet for 2-3 minutes before mixing to deepen their flavor and add a subtle nuttiness that elevates the entire cup.
- Coconut Oil as Binding Agent 🥥Melt coconut oil and mix it thoroughly with oats to create a sturdy structural base that holds its shape during baking and prevents crumbling when unmolded.
- Layer Strategically for Texture 🎨Press the oat mixture firmly into muffin cups, leaving a slight well in the center for yogurt, then top with delicate ingredients like berries and cacao nibs after baking to maintain their textural contrast.
- Chill Before Serving for Stability ❄️Refrigerate the baked cups for at least 2 hours before filling with yogurt to ensure they hold their structure and allow flavors to meld beautifully.
- Balance Sweetness with Salt Pinch 🧂Add a small pinch of sea salt to your oat mixture and yogurt filling to enhance sweetness perception and prevent the cups from tasting one-dimensional.
