Whisk the eggs and milk together in a bowl and season with salt and pepper. Spread mustard thinly on both slices of bread. Heat oil in a pan and spread it evenly.

Place the eggs in the pan and arrange both slices of bread side by side in the center of the pan. Let the omelet set over medium-high heat.

Once the egg is set, carefully turn the omelet and the bread slices over. Place cheese slices and other ingredients on one slice of bread, then fold the overhanging egg edges onto the bread. Finally, fold the two slices of bread together.

Fry the sandwich on both sides for one to two minutes over medium heat until the cheese is melted. Then slide it onto a plate, cut it in half, and enjoy.
