One Pot Buffalo Chicken Mac & Cheese
For the Chicken
For the Sauce
Instructions
1
Season chicken with salt, pepper, garlic powder, onion powder, and paprika.
2
Heat olive oil in a large pan over medium heat. Add chicken and cook for 5–7 minutes per side, or until fully cooked. Remove and set aside.
3
In the same pan, melt butter and sauté minced garlic until fragrant.
4
Add uncooked pasta and stir to coat in garlic butter.
5
Pour in broth and stir. Cook until pasta is al dente and most liquid is absorbed.
6
Add heavy cream and bring to a simmer. Season again with the same spices used on the chicken.
7
Stir in buffalo sauce, cheddar, mozzarella, and Parmesan until melted and creamy.
8
Return cooked chicken to the pan and mix well. If sauce is too thick, add a dash of milk until desired consistency is reached.
9
Top with extra Parmesan and serve hot.

Tips & Tricks (5)
- Cube Your Chicken Strategically ✂️Cut chicken breasts into uniform bite-sized pieces (about ¾-inch cubes) so they cook evenly in 5-7 minutes and won't overcook while the pasta finishes.
- Toast the Pasta Briefly 🍝After searing the chicken, lightly toast the dry pasta in the pot for 1-2 minutes with butter and garlic to add nutty depth before adding broth.
- Temper Your Cheese Addition 🧀Remove the pot from heat before stirring in the cheese blend to prevent it from becoming grainy or separating—add cheese to warm (not boiling) cream for silky texture.
- Buffalo Sauce Goes Last 🌶️Stir in buffalo sauce after all other ingredients are combined so you can taste and adjust heat levels without it cooking off or becoming overly concentrated.
- Use Bone Broth Over Water 🍗Substitute chicken bone broth for water to build deeper savory flavor and ensure the pasta cooks in a richly-flavored liquid that enhances every bite.
