One Pot Chicken Alfredo Pasta
Instructions
1
|
Heat olive oil in a large pan over medium heat. Add chicken and season with salt, pepper, garlic powder, and onion powder.
2
|
Cook chicken until browned on all sides, about 5–6 minutes. Add minced garlic and sauté for 1–2 minutes until fragrant.
3
|
Add chicken broth, heavy cream, and water. Stir to combine.
4
|
Add the pasta and ensure it’s mostly covered with liquid. Add a splash more water if needed.
5
|
Bring to a simmer and cook uncovered, stirring occasionally, until pasta is tender and most of the liquid has reduced, about 10–12 minutes.
6
|
Stir in Parmesan and Asiago cheeses until melted and creamy.
7
|
Serve immediately, topped with more cheese if desired.

Tips & Tricks (5)
- Pasta Water Magic 💧Reserve 1/2 cup of pasta cooking liquid before draining to help create a silkier, more emulsified sauce if the Alfredo becomes too thick.
- Chicken Searing Secrets 🍗Pat chicken breasts completely dry before searing to achieve a golden-brown crust that locks in maximum flavor and prevents steaming.
- Cheese Melting Technique 🧀Remove the pot from heat when adding cheeses and stir gradually to prevent breaking or becoming grainy, creating a smooth and creamy Alfredo sauce.
- Flavor Layering Hack 🌶️Toast garlic powder and onion powder in olive oil for 30 seconds before adding other ingredients to intensify their aromatic qualities and depth of flavor.
- One-Pot Liquid Balance 🥄Start with slightly less liquid than you think you need, as pasta will release starch and the sauce will naturally thicken during cooking.
