One Pot Chicken Broccoli Alfredo Pasta
Instructions
1
|
In a large pot over medium heat, melt butter and olive oil. Add minced garlic and sauté for 1–2 minutes until fragrant.
2
|
Season chicken with salt, pepper, garlic powder, onion powder, paprika, and basil. Add to the pot and cook until browned and cooked through.
3
|
Pour in chicken stock and heavy cream. Stir and bring to a simmer.
4
|
Add pasta and stir to coat. Simmer uncovered, stirring occasionally, for 10–12 minutes until pasta is mostly cooked.
5
|
When pasta is nearly done, stir in broccoli florets. Continue cooking until broccoli is tender and liquid is mostly absorbed.
6
|
Reduce heat and stir in Parmesan and mozzarella. Mix until melted and creamy.
7
|
Add a splash of cream or broth if needed to loosen the sauce. Serve hot, topped with more Parmesan and black pepper.

Tips & Tricks (5)
- Chicken Searing Secrets 🔥Pat chicken breasts completely dry before seasoning to achieve a perfect golden-brown crust that locks in flavor and prevents steaming.
- Pasta Liquid Magic 💧Reserve 1/2 cup of pasta cooking liquid before draining, which can help adjust sauce consistency and prevent the dish from becoming too thick.
- Broccoli Texture Hack 🥦Add broccoli florets in the last 3-4 minutes of cooking to maintain crisp texture and bright green color, preventing overcooking and mushiness.
- Cheese Melting Technique 🧀Remove the pot from heat before adding cheeses and stir gently to prevent separation, creating a smooth and creamy Alfredo sauce.
- Flavor Layering Pro Tip 🌶️Toast dried herbs like basil and paprika in the pan with olive oil for 30 seconds before adding other ingredients to intensify their aromatic qualities.
