1/4
One Pot Chicken Broccoli Alfredo Pasta
Instructions
1
In a large pot over medium heat, melt butter and olive oil. Add minced garlic and sauté for 1–2 minutes until fragrant.
2
Season chicken with salt, pepper, garlic powder, onion powder, paprika, and basil. Add to the pot and cook until browned and cooked through.
3
Pour in chicken stock and heavy cream. Stir and bring to a simmer.
4
Add pasta and stir to coat. Simmer uncovered, stirring occasionally, for 10–12 minutes until pasta is mostly cooked.
5
When pasta is nearly done, stir in broccoli florets. Continue cooking until broccoli is tender and liquid is mostly absorbed.
6
Reduce heat and stir in Parmesan and mozzarella. Mix until melted and creamy.
7
Add a splash of cream or broth if needed to loosen the sauce. Serve hot, topped with more Parmesan and black pepper.

Tips & Tricks (5)
- Pound Your Chicken Evenly 🍗Pound boneless chicken breasts to uniform thickness before cutting into bite-sized pieces to ensure they cook at the same rate and remain tender, preventing dry overcooked edges.
- Toast Your Garlic Carefully 🧄Add minced garlic after the oil is hot but remove from heat briefly before adding liquid to prevent it from burning and turning bitter, which would compromise the entire dish's flavor.
- Reserve Pasta Water for Creaminess 💧Save 1 cup of starchy pasta cooking water before draining and use it to adjust sauce consistency at the end, creating a silkier finish than cream alone.
- Add Broccoli at the Right Moment 🥦Stir in broccoli florets during the last 3-4 minutes of cooking so they remain bright green and crisp-tender rather than mushy, maintaining textural contrast in the final dish.
- Temper Your Cheeses Off Heat 🧀Remove the pot from heat before adding Parmesan and mozzarella, then stir gently to prevent the cheese from clumping or becoming grainy due to high temperature breaking down the proteins.
