Instructions

In a large pot over high heat, add spaghetti, sausage, sun dried tomatoes, garlic, olive oil, salt and water. Stir and bring to a boil uncovered, then reduce heat to medium high and cook for 10-11 minutes, stirring occasionally so the pasta doesn’t stick.

|
Add spinach to the pot and continue to cook for about 3-4 minutes while stirring, until the spinach is completely wilted and almost all of the water has reduced from the pot. Remove from heat and add the parmesan cheese, ground black pepper and red pepper flakes, then mix. A thin sauce will form from the remaining pasta water and cheese. Serve with additional parm and red pepper flakes. Enjoy!

Tips & Tricks (5)

  • Brown the Sausage First 🍖
Remove the sausage casing and break meat into small pieces before browning—this creates more surface area for flavor development and ensures even cooking throughout the dish.
  • Toast Sun-Dried Tomatoes in Oil 🍅
Briefly warm the sun-dried tomatoes in olive oil before adding other ingredients to rehydrate them and intensify their concentrated umami flavor.
  • Pasta Water is Liquid Gold 💧
Reserve 1-2 cups of starchy pasta cooking water before draining—use it to adjust sauce consistency and help emulsify the sauce with the cheese and oil for a silky finish.
  • Add Spinach Last for Perfect Texture 🥬
Stir in fresh baby spinach in the final 30 seconds of cooking so it wilts gently without turning dark or bitter, maintaining its vibrant color and delicate texture.
  • Finish with Cold Parmesan and Oil 🧀
Remove the pot from heat before adding fresh Parmesan and a drizzle of quality olive oil—this prevents the cheese from clumping and creates a luxurious, creamy coating.
