Tips & Tricks (5)
- Marinate for Maximum Flavor 🍊Combine orange juice, lime juice, garlic, and oregano and marinate halibut for 15-30 minutes before cooking to deeply infuse the citrus flavors without over-marinating, which can break down delicate fish flesh.
- Pat Fish Dry for Perfect Searing 💧Always pat halibut fillets completely dry with paper towels before cooking to create a golden crust and prevent steaming, which keeps the exterior crispy and the interior tender.
- Make Jalapeño Crema in Advance 🌶️Prepare the sour cream sauce 2-3 hours ahead and refrigerate to allow the jalapeño heat and flavors to mellow and marry together for a perfectly balanced, creamy condiment.
- Zest Citrus Fresh, Not Juice 🫒Add orange zest at the very end as a bright garnish rather than cooking it into the marinade to preserve its fragrant oils and vibrant flavor that gets lost with heat.
- Cook Fish at Exact Temperature 🌡️Cook halibut to 145°F internal temperature (about 10-12 minutes depending on thickness) to achieve perfectly opaque, flaky flesh that remains moist and tender without drying out.
