Place the shallots and carrots in a bowl and mix with oil, a little salt, and Ras el Hanout. Spread on a baking sheet and roast in the oven at 200°C for 20-25 minutes.
3
|
Mix tahini with lime juice and water to form a creamy sauce, season with garlic powder and salt.
4

Wash the spinach, spin it dry, and divide it between two plates or bowls. Distribute the roasted vegetables and falafel over the spinach, drizzle with tahini sauce, season with a little extra lime juice, and serve.

Tips & Tricks (5)
- Tahini Sauce Perfection 🥄Whisk tahini sauce thoroughly and let it sit for 5 minutes to thicken and develop a smoother, more integrated flavor profile.
- Falafel Warming Technique 🔥Warm pre-made falafel in a dry skillet over medium heat to restore crispiness and prevent them from becoming soggy or losing texture.
- Ras el Hanout Magic 🌶️Toast Ras el Hanout spice blend in a dry pan for 30 seconds before adding to the dish to unlock its full aromatic potential and deepen the flavor complexity.
- Lime Juice Timing 🍋Add fresh lime juice just before serving to maintain its bright, zesty flavor and prevent it from becoming bitter or losing its vibrant acidity.
- Baby Spinach Wilting Trick 🥬Gently warm baby spinach with residual heat from other ingredients to create a wilted texture without overcooking, preserving its fresh flavor and nutrients.
