Instructions

Rinse the quinoa thoroughly in a fine-mesh sieve, then add it to a pot of boiling water and cook according to the package instructions (about 15–20 minutes). Drain the quinoa and let it cool slightly.

|
Meanwhile, wash or peel the carrot and coarsely grate it. Wash the mint and parsley, shake off excess water, remove the leaves, and roughly chop them. Wash the spinach, spin dry, and roughly chop it as well. Crush the almonds in a mortar or roughly chop them with a knife. Drain the chickpeas, rinse them thoroughly, and let them drain well.

In a large bowl, combine the quinoa, chickpeas, herbs, spinach, carrot, almonds, raisins, and pomegranate seeds. Stir in the juice of 1–2 limes (depending on their juiciness) and the hummus. Season with salt and pepper to taste and mix well.

Tips & Tricks (5)

  • Quinoa Rinsing Technique 🚰
Always rinse quinoa thoroughly in a fine-mesh strainer to remove the natural saponin coating, which can create a bitter taste, ensuring a cleaner and more pleasant flavor profile.
  • Herb Chopping Pro Tip 🔪
When chopping fresh mint and parsley, use a sharp knife and rock-chop technique to prevent bruising, which helps maintain the herbs' vibrant color and fresh flavor.
  • Pomegranate Seed Extraction 💥
To easily remove pomegranate seeds, cut the fruit in half and tap the back with a wooden spoon over a bowl, allowing seeds to fall out cleanly without messy splatter.
  • Toasting Almonds Perfectly 🥜
Dry toast almonds in a skillet over medium heat for 3-4 minutes, stirring constantly, to enhance their nutty flavor and add a delightful crunch to the salad.
  • Lime Juice Maximization 🍋
Roll the lime on the countertop before juicing to break down internal membranes, which helps release more juice and ensures maximum flavor extraction.
