Place potatoes in a pot, cover with water, and bring to a boil. Reduce heat and simmer gently with the lid partially closed for about 15 to 20 minutes, until the potatoes are tender. Drain potatoes and let them steam briefly.

Preheat the oven to 200°C (390°F) using conventional oven settings (top and bottom heat). Peel and finely dice the garlic or press it through a garlic press. Mix with olive oil and apple cider vinegar.

Spread the potatoes on a baking sheet lined with parchment paper. Using the bottom of a glass, the back of a spatula, or something similar, flatten them slightly. Brush (or drizzle) the marinade over the potatoes, then season generously with salt and pepper.

Place the potatoes in the oven at 200°C for a total of 35 to 40 minutes, after 20 minutes distribute the Parmesan cheese over the potatoes and then roast them in the oven for another 15 to 20 minutes until crispy.
