Ingredients

  • ½ cup - flour
  • 1 tsp - All purpose seasoning
  • ½ tsp - Paprika
  • 2 - Eggs
  • ½ cup - Panko
  • ½ cup - Breadcrumbs
  • ⅓ cup - Parmesan cheese
  • 2 - Zucchini
  • Cooking spray
  • Ranch dressing

Instructions

  1. Preheat oven to 425 degrees F.
  2. In a shallow dish whisk together the flour, all purpose seasoning, and paprika.
  3. Beat the 2 eggs in a separate shallow dish.
  4. In the third shallow dish add the panko, breadcrumbs, parmesan cheese, and then whisk together.
  5. Dredge the zucchini fries into the flour mixture first, then the egg, and lastly in the panko mixture.
  6. Line a baking sheet with parchment paper and place zucchini in a single layer. Spray them with nonstick cooking spray.
  7. Bake for 12-15 minutes.
