Oven-Fried Chicken Drumsticks
Instructions
1
Preheat the oven to 450°F.
2
Line two 9x13-inch baking pans with heavy-duty aluminum foil. Set aside.
3
In a gallon-sized zip-top plastic bag, combine the flour, salt, black pepper, paprika, curry powder, and poultry seasoning. Seal the bag and toss the ingredients lightly to combine.
4
Divide the butter between the prepared baking pans.
5
Place the baking pans in the oven for 5 minutes to melt the butter.
6
Working with 3-4 drumsticks at a time, place them in the seasoned flour mixture, seal the bag, and toss to fully coat the chicken in the flour.
7
Arrange the chicken in the melted butter in the baking dishes.
8
Bake the drumsticks on middle rack of oven for 30 minutes.
9
Using tongs, turn each drumstick over. Continue baking until the meat begins to shrink from the bone and has reached an internal temperature of 165°F, about 20 minutes.
10
Check to see that drumsticks are done. Remove from oven or add time as needed.
11
Serve the drumsticks immediately.

Tips & Tricks (5)
- Butter-Coating Technique 🧈Melt butter and brush it onto the drumsticks before coating with flour and seasonings to create an extra-crispy, golden exterior that rivals deep-fried results.
- Double-Dredge Method 🥄After your initial flour coating, lightly dampen the drumsticks and dredge again in the seasoned flour mixture to build layers that fry up incredibly crispy in the oven.
- Spice Blooming Strategy 🌶️Toast your curry powder, paprika, and poultry seasoning in the melted butter for 30 seconds before mixing with flour to unlock deeper, more complex flavors.
- Wire Rack Elevation 📍Always place drumsticks on a wire rack set over your baking sheet to allow hot air to circulate underneath, ensuring crispy skin on all sides without soggy bottoms.
- Pat-Dry Perfection 💧Thoroughly pat drumsticks dry with paper towels before coating—this removes surface moisture that prevents the flour from adhering properly and achieves maximum crispiness.
