
Paleo Apple Pie Bars
I love baking year round but there’s something special about baking in the fall. It’s extra cozy due to the cooler temperatures out and I love using fresh apples. These apple pie bars are everything you love about apple pie in bar form. A thick shortbread layer is topped with cinnamon apples and then a crumbly topping completes it. These are super easy but super delicious!

Ingredients
- 1 cup - almond flour
- ¼ cup - coconut flour
- ¼ cup - coconut oil
- 3 tablespoons - honey
- ½ tsp - vanilla
- 2 ½ cups - apples
- ¼ cup - maple syrup
- 1 tbsp - coconut oil
- 1 tsp - cinnamon
- 1 tsp - pumpkin pie spice
- 1 dash - nutmeg
Instructions
- Preheat oven to 350. Line a 9×9 glass pan with parchment paper.
- Make shortbread layer first. Add ingredients to a large mixing bowl and mix until combined. Spread 3/4 of this mixture into pan and bake for 9-11 minutes.
- While the shortbread layer bakes, make the apple layer. Add all ingredients to a medium saucepan over medium heat. Let cook for 10 minutes, stirring. Apples should become soft.
- Let shortbread layer cool for 5-10 minutes then pour apple mixture on top.
- Crumble remaining shortbread layer on top of apples.
- Bake 15-20 minutes or until just golden on top.
- Let cool completely before serving. Store in the fridge.
