Paleo Apple Pie Bars
For the shortbread layer
For the apple layer
Instructions

Preheat oven to 350. Line a 9×9 glass pan with parchment paper.

Make shortbread layer first. Add ingredients to a large mixing bowl and mix until combined. Spread 3/4 of this mixture into pan and bake for 9-11 minutes.

While the shortbread layer bakes, make the apple layer. Add all ingredients to a medium saucepan over medium heat. Let cook for 10 minutes, stirring. Apples should become soft.

Let shortbread layer cool for 5-10 minutes then pour apple mixture on top.

Crumble remaining shortbread layer on top of apples.

Bake 15-20 minutes or until just golden on top.

Let cool completely before serving. Store in the fridge.
