These Paleo Morning Glory Muffins are bursting with so many great flavors and textures. Morning Glory Muffins are muffins filled with numerous add ins. These include carrots, applesauce, coconut flakes, and pecans. The name Morning Glory Muffins supposedly comes from the Morning Glory Cafe in Nantucket, where they originated. These Paleo muffins are light, fresh, fluffy and healthy. In addition, they are great for an easy breakfast or quick afternoon snack!

Ingredients

  • 2 cups - almond flour
  • ½ cup - tapioca flour
  • 2 teaspoons - baking soda
  • 3  - eggs
  • 1 tbsp - cinnamon
  • ½ cup - applesauce
  • ½ cup - carrots
  •  cup - coconut flakes
  • ¼ cup - pecans
  • ½ cup - coconut sugar
  • ¼ cup - coconut oil
  • ¼ cup - pure maple syrup
  • 1 tbsp - orange juice
  • 1 tbsp - orange zest
  • ½ cup - golden raisins
  • 1 tsp - vanilla extract

  1. First, preheat oven to 350 degrees and line a muffin tray with paper liners.
  2. In a large mixing bowl, sift almond flour, tapioca flour and baking soda. Set aside.
  3. Then, whisk in eggs. Grate carrots and squeeze out any extra liquid from carrots.
  4. Add all remaining ingredients, stirring to combine.
  5. Once combined, pour batter into muffin liners. Fill liners almost to the top.
  6. Next, bake muffins for 20 to 22 minutes or until a toothpick inserted in muffins comes out clean.
  7. Remove from oven and cool for 15 minutes before serving.
