Instructions
1
Preheat the oven to 180°C (350°F). Place the macadamia nuts in a food processor and process until they are almost a paste. Transfer the nuts to a bowl, then add the butter cookies to the food processor and process until they are so fine that they resemble coarse flour.
2
Mix nuts, cookie crumbs, sugar, and salt in a bowl. Add melted butter and mix everything with a fork until small clumps form.
3
Place the cookie crumbs into the pan and press them evenly onto the bottom and up the sides. A measuring cup with a flat bottom works best for this, ensuring a smooth surface. The top edge of the base should be about 0.5 centimeters thick and flush with the rim of the pan.
4
Place the base in the oven at 180°C (350°F) using conventional oven settings (top and bottom heat) for 8 to 10 minutes, until the surface and edges are lightly golden brown. Remove the pan from the oven and let it cool for approximately 20 minutes.

Tips & Tricks (5)
- Chill the Crust Base 🧊Refrigerate your buttered biscuit crust mixture for at least 30 minutes before pressing into the tart pan to prevent shrinkage and ensure a crisp, structurally sound base that holds the creamy filling.
- Fresh Passion Fruit Selection 🍯Choose wrinkled passion fruits over smooth ones—the wrinkled skin indicates peak ripeness with maximum juice and flavor intensity, which is essential for an authentic, vibrant filling.
- Strain the Passion Fruit Pulp 🥣Press the passion fruit mixture through a fine-mesh strainer to remove seeds and ensure a silky-smooth filling texture while retaining all the concentrated flavor and juice.
- Stabilize Your Whipped Cream 🍦Add a tablespoon of mascarpone or a pinch of gelatin to your whipped cream to prevent weeping and maintain its structural integrity when folded into the condensed milk mixture.
- Toast Macadamia Nuts for Depth 🌰Lightly toast the macadamia nuts in a dry pan for 2-3 minutes before grinding for the crust to develop rich, buttery flavors that complement the tropical tartness of the filling.
