  • 4 tablespoon - unsalted butter
  • 4 cup - chicken stock
  •   - Salt
  • 1 cup - pastina pasta
  • 2  - eggs
  • ¾ cup - Parmesan cheese
  •   - Black pepper
  •   - Drizzle of olive oil

  1. In a large pot over medium heat, melt 2 tbsp of butter.
  2. Add chicken stock and bring to a simmer. Season with salt to taste.
  3. Add pastina and stir. Simmer gently, stirring occasionally, until most of the liquid is absorbed and the pasta is tender.
  4. Turn off the heat. Stir in the remaining 2 tbsp of butter, beaten eggs, and Parmesan cheese quickly to create a creamy consistency.
  5. Season with more salt and black pepper to taste.
  6. Serve hot, topped with extra Parmesan, a drizzle of olive oil, and more black pepper if desired.
