This Pea Pesto is the perfect way to brighten up your meals with the sweet flavor of peas, fragrant basil and refreshing mint. Spring is here, and with it comes an abundance of fresh herbs. Bright green mint and basil is mixed with blanched frozen peas to make one of the best seasonal pesto variations – this Pea Pesto. While it has many of the ingredients familiar to a traditional pesto, this nut-free spring pesto can add an extra zing to spring dishes. Not only is it incredibly easy to make, but it’s versatile to enjoy as a sauce, a savory snack or even as-is for a bright dip.

Ingredients

  • 1 cup - frozen peas
  • ½ cup - fresh basil
  • ¼ cup - mint leaves
  • ¼ cup - parmesan cheese
  • 1 tsp - lemon zest
  • 1 ½ tablespoons - lemon juice
  • 2 cloves - garlic
  • ¼ tsp - red pepper flakes
  • ¼ tsp - kosher salt
  • ⅓ cup - olive oil

Instructions

  1. Add 2 cups water to a medium saucepan and bring to a boil. Once boiling drop in frozen peas and set a timer for 90 seconds.
  2. Drain peas and run cold water over to stop the cooking.
  3. Add the first 9 ingredients (everything except the olive oil) into the bowl of a food processor. Run on low for 1 to 2 minutes, stopping to scrape down the sides, as needed.
  4. Secure the lid and drizzle in ⅓ cup olive oil with food processor running on low. Taste and adjust salt or red pepper flakes, as needed.
  5. Store in an air-tight container in the refrigerator for up to 10 days.
