Tips & Tricks (5)
- Brown Your Peanut Butter 🥜Slightly toast the peanut butter in a dry pan for 1-2 minutes before mixing to deepen its flavor and reduce any raw taste, creating a more complex, nutty profile.
- Strategic Salt Layering 🧂Reserve some coarse salt to sprinkle on top after pouring batter into the pan—this creates pockets of salt that amplify the peanut butter flavor and provide textural contrast.
- Don't Overmix the Batter 🥣Mix until just combined after adding flour and baking powder; overmixing develops gluten and results in dense, cake-like blondies instead of the desired soft, chewy texture.
- Underbake for Optimal Chewiness ⏱️Remove blondies when the center still jiggles slightly (a toothpick should have moist crumbs)—they'll continue cooking as they cool, delivering that perfect chewy interior you're after.
- Maple Syrup Temperature Matters 🍁Warm the maple syrup slightly before mixing to ensure it incorporates smoothly and distributes evenly throughout the batter, preventing clumping and ensuring consistent sweetness in every bite.
